Cranberry scallion grilled cheese

  1. Combine the cranberries, maple syrup, brown sugar, lime juice and lime zest in a small saucepan over medium-low heat.
  2. Bring to a boil until the cranberries start popping, stirring frequently.
  3. Reduce heat to a simmer and cook for another 10 minutes until thickened.
  4. Remove from heat.
  5. Melt 1 tablespoon of butter in a large saucepan over medium heat. I like to use medium vs. a higher heat for grilled cheese to give the cheese plenty of time to melt before the bread burns. An alternative to melting the butter in the pan is just to spread butter on one side of each slice of bread. I put it directly in the pan because I was using bread that had seasonings on it.
  6. While the pan is heating, assemble the sandwiches. Layer the cheese on one slice of bread and sprinkle with sliced scallions. Spread about 2 tablespoons of the cranberry sauce on the second slice of bread and top the sandwich.
  7. Once the pan is hot, and the butter is melted, place the sandwich in the pan. Cook for 3-4 minutes per side until browned, and the cheese is melted. Keep an eye on it - if your pan gets too hot the bread will burn while you are waiting for the mozzarella to melt.
  8. Cut in half and serve immediately.
