Double Chocolate Mint Cookies
Ingredients:
- 1 cup butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla bean paste
- 1 1/4 cups flour
- 3/4 cup cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Instructions:
- Use a mixer to beat the butter, brown sugar and granulated sugar together for about 5 minutes, until pale and fluffy.
- Add the egg and vanilla, mixing for another minute or so until smooth.
- Add the dry ingredients, mixing just until combined.
- Stir in the mint chocolate chunks.
- Scoop your cookie dough into large balls, about 2 tablespoons, onto a parchment-lined baking sheet. Place in the freezer for 30 minutes to chill the dough.
- When ready, heat the oven to 350 degrees F. Line cookie sheets with parchment paper and place 6 cookies per sheet, a couple of inches apart. Bake for 10 minutes. Remove the tray and tap it lightly a few times on the counter. Return it to the oven and repeat every 2 minutes until you reach 16 minutes baking time.
- Slide the parchment off of the baking sheets right away so they stop baking and let the cookies cool on the counter.
