Double Chocolate Mint Cookies

Ingredients:

  1. Use a mixer to beat the butter, brown sugar and granulated sugar together for about 5 minutes, until pale and fluffy.
  2. Add the egg and vanilla, mixing for another minute or so until smooth.
  3. Add the dry ingredients, mixing just until combined.
  4. Stir in the mint chocolate chunks.
  5. Scoop your cookie dough into large balls, about 2 tablespoons, onto a parchment-lined baking sheet. Place in the freezer for 30 minutes to chill the dough.
  6. When ready, heat the oven to 350 degrees F. Line cookie sheets with parchment paper and place 6 cookies per sheet, a couple of inches apart. Bake for 10 minutes. Remove the tray and tap it lightly a few times on the counter. Return it to the oven and repeat every 2 minutes until you reach 16 minutes baking time.
  7. Slide the parchment off of the baking sheets right away so they stop baking and let the cookies cool on the counter.
