Everything Bagel Focaccia Bread

Instructions:

  1. Combine the yeast and warm water in a medium bowl and let sit for about 5 minutes to activate the yeast. It should look foamy.
  2. Add the flour, salt, 1/4 cup olive oil and 1 tablespoon of the everything bagel seasoning.
  3. You can mix this dough with the dough hook on a stand mixer or with a wooden spoon until a dough forms, and it comes away from the sides of the bowl.
  4. If mixing by hand, turn out onto a lightly floured surface and knead until smooth, about 20 times. If using the stand mixer, mix on medium-high speed for about 2 minutes until the dough is smooth and elastic.
  5. Brush the inside of a bowl with olive oil and place the dough in the bowl. Cover lightly with plastic wrap and a damp kitchen towel and leave in a warm place to rise for about an hour or until doubled in size.
  6. When ready, brush a quarter sheet pan with olive oil and press the dough into the pan evenly.
  7. Use your fingertips to dimple the bread all over.
  8. Brush the top of the bread with more olive oil and sprinkle with the remaining tablespoon of the seasoning.
  9. Cover lightly with plastic wrap and a damp kitchen towel and leave to rise for another 30 minutes.
  10. Meanwhile, preheat the oven to 450 degrees F.
  11. Bake at 450 degrees F. for 15 minutes or until golden brown on top. It will be crispy on the outside and chewy on the inside. Let cool before removing from the pan and cutting into squares.
