Favourite Blog Spot: Herb & Eatery
Ingredients:
- 1 cup sugar
- 1 cup water
- 5-7 mint leaves (less or more depending on how minty you want it)
- 1 vanilla bean
- 3/4 cup cold coffee
- 3/4 cup almond milk
- Ice
Instructions:
- Combine the sugar, water and mint leaves in a small saucepan over medium-low heat.
- Scrape out the vanilla bean and add everything to the saucepan.
- Bring to a boil, stirring regularly until the sugar is dissolved.
- Remove from heat and let cool before transferring to a container to store. You can strain the syrup now, but I just kept everything in it and strained it each time I made a drink.
- Pour the cold coffee over ice into a glass and add 1 teaspoon of the vanilla-mint syrup.
- Froth the almond milk with a milk frother or by shaking it in a sealed container (mason jar). Pour over the coffee and serve.
