  1. Combine the sugar, water and mint leaves in a small saucepan over medium-low heat.
  2. Scrape out the vanilla bean and add everything to the saucepan.
  3. Bring to a boil, stirring regularly until the sugar is dissolved.
  4. Remove from heat and let cool before transferring to a container to store. You can strain the syrup now, but I just kept everything in it and strained it each time I made a drink.
  5. Pour the cold coffee over ice into a glass and add 1 teaspoon of the vanilla-mint syrup.
  6. Froth the almond milk with a milk frother or by shaking it in a sealed container (mason jar). Pour over the coffee and serve.
