Fried Apple Rings
Ingredients:
- 2 large tart apples like Granny Smith
- 1/2 cup all-purpose flour
- 1/2 cup milk*
- 1 tablespoon sugar
- 1 teaspoon vanilla extract or vanilla bean paste
- Pinch of nutmeg
- Pinch of salt
- 1/2 cup sugar
- 1 tablespoon cinnamon
Instructions:
- Heat 1 inch of vegetable or canola oil in a deep pan or pot to 375 degrees F. You will want to use a thermometer and make sure the temperature stays even throughout the frying.
- Slice the apples into 1/4 inch thick slices (about 6 per apple) and use a small knife or circular cutter to remove the core from each. I don't remove the skins because I like the flavor, but feel free to peel the apples first if you prefer. The batter also sticks slightly better when the skins are removed.
- Whisk together the flour, milk, sugar, vanilla, nutmeg and salt until smooth. It should look like a pancake batter.
- Mix the remaining 1/2 cup sugar and cinnamon together in a shallow dish or sheet pan and set aside.
- Dip each apple slice into the batter, letting any excess run off into the bowl.
- Fry for 2-3 minutes per side until the batter is golden brown. Fry in batches of only 3 or 4. The more cold apples you add, the cooler your oil will get, which will result in oily apples.
- Use tongs to remove apples from the hot oil and place on a paper towel-lined plate to drain off excess oil.
- While still warm, transfer them to the cinnamon sugar and toss to coat. Serve warm with vanilla ice cream.
