Garlic Naan with Fresh Herbs
Ingredients:
- 1 cup warm milk
- 1 tablespoon sugar
- 1 package active dry yeast
- 1 cup Greek yogurt
- 4 cups flour
- 1 teaspoon salt
- 1/4 cup butter
- 2 teaspoons garlic salt
- 3 tablespoons, chopped fresh herbs such as cilantro, thyme and oregano
Instructions:
- Combine warm milk, sugar and yeast in a small dish and let sit for 5-10 minutes until foamy.
- Pour into the bowl of a stand mixer. Whisk in the yogurt until combined, and the yeast and sugar are fully dissolved.
- Add the flour and salt and mix with the dough hook on low until combined. Turn the mixer to high and continue to mix until the dough pulls away from the sides of the bowl. It should be smooth but slightly sticky.
- Brush a large bowl with olive oil and transfer the dough to the bowl. Cover lightly with plastic wrap and let rise in a warm place until the dough is doubled in size, about an hour. I like to turn the oven to its lowest setting around 150 degrees F., then turn it off and let the dough rise in the oven with the door cracked open.
- Turn the dough out onto a very lightly floured surface and divide it into 10 equal pieces.
- Use a rolling pin to roll each piece of dough into a large oval. It should be about 1/3 inch thick. If you go too thin, it will tear when you try to lift it and move it to the pan.
- Melt the butter and brush lightly on both sides of the naan. Note that the naan will stick to parchment paper so I find that the best place to put it prior to cooking is just on a lightly floured cutting board or on cookie sheets.
- Heat a large skillet over medium high heat. You need a very hot skillet to cook the naan.
- Once the skillet is heated, place the first piece of naan into the skillet. Cover with a pot lid or with foil and let cook for 1 minute. Flip, and cook uncovered for another 1 1/2 minutes. The naan should bubble up while it is cooking.
- Remove from the skillet and place on a paper towel lined plate. Immediately sprinkle with some garlic salt and fresh, chopped herbs.
- Cover with another paper towel or kitchen towel and repeat with the remaining pieces of naan.
