Grapefruit Scones
Ingredients:
- 1 Grapefruit
- 1/4 cup sugar
- 2 cups flour
- 2 teaspoons baking powder
- A pinch of salt
- 1/4 cup cold butter, cut into chunks/pieces
- 1/2 cup heavy cream
- 1/2 cup vanilla Greek yogurt
- 3 Tablespoons Demerara sugar
- 1/2 cup icing sugar
Instructions:
- Preheat oven to 450 degrees F.
- Zest the entire grapefruit before cutting it. Set the zest aside for later.
- Slice the grapefruit in half, then cut off all of the peel and pith. Use a knife to remove the grapefruit wedges over a bowl to catch the juice. I ended up with about 1/4 cup grapefruit juice. Set the juice and the grapefruit wedges aside.
- Combine the sugar, flour, baking powder and salt in a food processor. Add the cold butter and pulse until it forms pea-sized bits (similar to a pie crust).
- Combine the cream, Greek yogurt and the grapefruit wedges.
- Add the yogurt mixture to the dry ingredients and stir until all ingredients are just moistened and incorporated.
- Place the mixture onto a piece of parchment paper lining a baking sheet. Put some flour on your hands and form an 8-inch circle about 1-inch thick.
- Combine the grapefruit zest and the Demerara sugar and sprinkle the mixture on top of the scones. Cut into 8 slices like a pizza and separate them on the baking sheet.
- Bake for 15 minutes or until golden brown and a toothpick comes out clean.
- Combine the grapefruit juice and the icing sugar to make a glaze. Pour over the scones once they have cooled.
