Greek Avocado Toast
Ingredients:
- 1 piece naan (or pita bread, cut into quarters)
- 1/2 cup cucumber (chopped)
- 1/4 cup cherry tomatoes (halved)
- 1/2 cup crumbled feta
- 1/4 cup pepperoncini
- 1/4 cup kalamata and/or green olives
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon red pepper flakes
- 1 large avocado
- Hummus (use your favourite)
- Salt & pepper (to taste)
Instructions:
- Preheat oven to 400 degrees F.
- Place your naan quarters onto a baking sheet and bake at 400 for 5 minutes or until lightly toasted.
- Meanwhile, toss the cucumber, tomatoes, feta, pepperoncini and olives with the olive oil, lemon juice, Italian herbs and red pepper flakes in a small bowl.
- Mash up your avocado and season with a little salt and pepper.
- Spread hummus on top of the toasted naan.
- Top with mashed avocado and spoon the veggie mixture on top.
