Green Goddess Breakfast Tacos
Ingredients:
For the green goddess dressing
- 1/2 cup spinach
- 1/4 cup cilantro
- 1/4 cup parsley
- 1 clove garlic, minced
- 2 green onions
- 2 tablespoons salsa verde, optional for extra flavour and spice
- Juice of 1 lime
- 1/4 cup Greek yogurt
- Salt & pepper, to taste
For the breakfast tacos
- Green goddess dressing, recipe above
- 2 eggs per person
- 1/4 cup spinach, per person
- 1/2 avocado per person
- Small flour tortillas for tacos (as many as you need)
- Sliced green onions, cilantro and lime wedges, for garnish
Instructions:
For the green goddess dressing
- Combine all ingredients in a blender or food processor until smooth.
For the breakfast tacos
- Start by making the green goddess dressing and getting any of your other toppings ready to go before you scramble the eggs.
- While you are preparing your sauce and toppings, add a little butter to a pan and heat it over medium-high heat. When the pan is hot, add spinach and cook for 1-2 minuets until wilted. Add the eggs and scramble with the spinach. You will want about 2 eggs per person or 1 per taco.
- Assemble the tacos by piling the scrambled eggs up on small tortillas. Top with avocado, green onions, cilantro and a drizzle of the green goddess dressing.
