Grown-up Pizza Bagels
Ingredients:
For the sundried tomato spread
- 1/4 cup sundried tomatoes in olive oil
- 1/4 cup marinated artichoke hearts
- 1 Tablespoon olive oil
- 1 clove garlic (minced)
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
For the pizza bagels
- 2 bagels (halved)
- Sundried tomato spread
- 1 cup grated gouda cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup sliced kalamata olives
- 1/4 cup sundried tomatoes
- Bunch of arugula
Instructions:
For the sundried tomato spread
- Combine all ingredients in a blender or food processor and pulse until chunky and spreadable (or until smooth if you prefer).
For the pizza bagels
- Preheat oven to 400 degrees F.
- Place the bagels on a parchment-lined sheet pan and toast in the oven for about 5 minutes before assembling the pizzas to prevent them from getting soggy.
- Divide the sundried tomato spread evenly between the 4 bagel halves.
- Top with equal amounts of the cheeses and sprinkle with the olives and additional sundried tomatoes (or whatever toppings you like).
- Bake at 400 degrees F. for 5-10 minutes until the cheese is melted and starting to brown.
- Remove from the oven and sprinkle with the arugula before eating.
