Hans, Bubbly Champagne Cocktail
Ingredients:
For the juice
- Juice of 1 lime
- 1/4 cup maple syrup
- 3/4 cup pomegranate seeds (about 2)*
- 1 cup sliced persimmons (about 2)
For the champagne cocktail
- 2 ounces juice per cocktail
- 1 bottle of champagne (makes 4-6 drinks)
- Fresh mint, pomegranate seeds and persimmon slices for garnish
Instructions:
- Make the juice. Combine pomegranate seeds, persimmon, lime juice and maple syrup in a small saucepan over medium heat. Bring to a boil and cook for 5 minutes or so until the persimmon has softened.
- Transfer the mixture to a blender or food processor and blend until liquid. Press through a fine sieve and store the juice in a sealed container in the fridge for up to 2 weeks.
- Make the cocktails. Fill a glass with two ounces of the homemade fruit juice.
- Top the glass off with champagne and serve with a bit of mint, slice of persimmon and some fresh pomegranate seeds (they will float to the top)!
