Hans, Bubbly Champagne Cocktail

Ingredients:

Instructions:

  1. Make the juice. Combine pomegranate seeds, persimmon, lime juice and maple syrup in a small saucepan over medium heat. Bring to a boil and cook for 5 minutes or so until the persimmon has softened.
  2. Transfer the mixture to a blender or food processor and blend until liquid. Press through a fine sieve and store the juice in a sealed container in the fridge for up to 2 weeks.
  3. Make the cocktails. Fill a glass with two ounces of the homemade fruit juice.
  4. Top the glass off with champagne and serve with a bit of mint, slice of persimmon and some fresh pomegranate seeds (they will float to the top)!
