Healthy Breakfast Tacos

  1. Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the kale, season lightly with salt and pepper and saute for 5 minutes until kale is bright green and starting to get crispy. Transfer to a small dish and set aside.
  2. To the same pan, add the remaining 1 tablespoon of olive oil and the soy chorizo or turkey sausage. Cook according to package directions (usually about 5 minutes).
  3. Add egg whites directly to the pan with the chorizo or sausage. Cook, mixing with a flexible spatula constantly, to scramble the eggs until they reach your desired doneness. If needed, season with salt and pepper to taste. Note that the chorizo and sausage are both quite salty so you likely won't need additional salt.
  4. Serve immediately in warmed up tortillas and top with your favorite toppings.
