Healthy Hot Chocolate

Instructions:

  1. If using the vanilla bean, slice the pod in half and scrape out the seeds. You will use the pod and the seeds so don't throw it out.
  2. Combine the oat milk, almond milk, maple syrup, cocoa powder, vanilla bean seeds and pod in a small saucepan over medium low heat.
  3. Whisk together the mixture and cook until the milk is just steaming but NOT boiling. You will need to stir it every once in a while to make sure the cocoa powder mixes in and dissolves without any lumps.
  4. Remove from the heat. Use a fork to remove the vanilla bean pod and pour the hot chocolate into a big mug.
  5. Top with a pinch of cinnamon and some mini marshmallows or whipped cream.
