Healthy Hot Chocolate
Ingredients:
- 3/4 cup plain, unsweetened oat milk
- 3/4 cup plain, unsweetened almond milk
- 2 tablespoons maple syrup*
- 2 tablespoons unsweetened cocoa powder*
- 1 vanilla bean pod*
- Pinch of cinnamon
- Vegan mini marshmallows or whipped cream, for topping
Instructions:
- If using the vanilla bean, slice the pod in half and scrape out the seeds. You will use the pod and the seeds so don't throw it out.
- Combine the oat milk, almond milk, maple syrup, cocoa powder, vanilla bean seeds and pod in a small saucepan over medium low heat.
- Whisk together the mixture and cook until the milk is just steaming but NOT boiling. You will need to stir it every once in a while to make sure the cocoa powder mixes in and dissolves without any lumps.
- Remove from the heat. Use a fork to remove the vanilla bean pod and pour the hot chocolate into a big mug.
- Top with a pinch of cinnamon and some mini marshmallows or whipped cream.
