Holiday White Bean Hummus
Ingredients:
For the hummus:
- 1 15.8 oz can Great Northern beans (or other white beans) (drained and rinsed)
- Juice of 1 lime (about 1/4 cup)
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon cumin
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon paprika
For the salsa:
- 5-6 to matillos
- 1 poblano pepper
- Olive oil
- Salt & pepper
- 1 cup cilantro
- 1 Tablespoon lime juice
- 1 clove garlic (minced)
Instructions:
For the hummus:
- Combine all ingredients in a blender or food processor until smooth. Add more olive oil if needed to get a smooth consistency.
For the salsa:
- Preheat oven to 400 degrees F and line a sheet pan or roasting pan with foil.
- Place the tomatillos and poblano pepper on the prepared pan. Brush with olive oil and sprinkle with salt and pepper.
- Roast at 400 degrees for 10 minutes. Turn the tomatillos and pepper over and roast for an additional 10 minutes.
- Let them cool for a few minutes before combining the roasted tomatillos and poblano with the remaining ingredients in a blender or food processor by pulsing a few times.
To assemble:
- Place the white bean hummus is a small dish. Top with a swirl of the green salsa and another swirl of sriracha for some added spice. Note that you can use store-bought salsa or skip either the salsa or sriracha if you like. The hummus is also delicious on its own.
- Serve with some pretzel thins or pita chips and lots of red and green veggies such as bell peppers, celery, cucumber, cherry tomatoes, radishes, etc.
