Holiday White Bean Hummus

Ingredients:

For the hummus:

  1. Combine all ingredients in a blender or food processor until smooth. Add more olive oil if needed to get a smooth consistency.

For the salsa:

  1. Preheat oven to 400 degrees F and line a sheet pan or roasting pan with foil.
  2. Place the tomatillos and poblano pepper on the prepared pan. Brush with olive oil and sprinkle with salt and pepper.
  3. Roast at 400 degrees for 10 minutes. Turn the tomatillos and pepper over and roast for an additional 10 minutes.
  4. Let them cool for a few minutes before combining the roasted tomatillos and poblano with the remaining ingredients in a blender or food processor by pulsing a few times.

To assemble:

  1. Place the white bean hummus is a small dish. Top with a swirl of the green salsa and another swirl of sriracha for some added spice. Note that you can use store-bought salsa or skip either the salsa or sriracha if you like. The hummus is also delicious on its own.
  2. Serve with some pretzel thins or pita chips and lots of red and green veggies such as bell peppers, celery, cucumber, cherry tomatoes, radishes, etc.
