Jalapeno Cheese Bread
Ingredients:
- 3 1/2 cups all-purpose flour
- 2 teaspoons salt
- 1 1/2 teaspoon active dry yeast
- 1 1/2 cups warm water
- 2/3 cup chopped, pickled jalapenos, drained and pressed between paper towels to remove moisture
- 1 cup shredded cheddar cheese
- 1/4 cup cubed cheddar cheese
Instructions:
- Combine 3 cups flour, salt, yeast and warm water in a stand mixer fitted with the hook attachment until a dough forms (it will be very sticky).
- Cover the bowl with plastic wrap and let sit in a warm area for at least 12 hours and up to 18 hours (I usually leave it overnight).
- Preheat the oven to 450 degrees F. Place the cast iron pot with the lid on in the oven for 20-30 minutes while it heats up.
- Turn the dough onto a lightly floured surface and add the additional 1/2 cup flour, jalapenos and shredded cheese. Use your hands to incorporate everything and form the dough into a ball. Place on a piece of parchment paper.
- Press the additional cubed cheese randomly into the dough throughout and close the dough over them by pinching.
- Place the dough into the heated pot and bake at 450 degrees F. for 30 minutes with the lid on.
- Remove the lid and bake for another 15 minutes.
- Let cool before slicing.
