Jalapeno Grilled Cheese
Ingredients:
For the grilled cheese:
- 4 slices sourdough bread (or your favourite bread)
- 2 tablespoons butter, softened
- 1 clove garlic, minced
- Pinch of salt
- 1 jalapeno, thinly sliced
- 1/2 tomato, thinly sliced and blotted with paper towel to remove excess moisture
- Sliced, fresh mozzarella cheese (however much you like)
For the green goddess dressing
- 1/2 avocado
- 1/4 cup basil leaves
- 1 green onion, chopped
- 1 clove garlic, minced
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt & pepper, to taste
Instructions:
For the grilled cheese
- Stir together the softened butter, garlic and salt until combined.
- Spread one side of each slice of bread with the garlic butter.
- Heat a large skillet or grill pan over medium heat and add 2 slices of bread, butter side down.
- Top with slices of mozzarella cheese, jalapenos and tomatoes and place remaining slices of bread on top, butter side up.
- Cook until golden brown, and cheese is melting, about 5 minutes. Flip and cook for another minute or two until the other side is golden brown, and the cheese is fully melted.
- Serve with green goddess dressing for dipping.
For the green goddess dressing
- Combine all ingredients except the salt and pepper in a food processor or blender until smooth. Season with salt and pepper, to taste.
