Leftover Mashed Potato Bites
Ingredients:
- 2 cups leftover mashed potatoes
- 1 egg
- 1 1/4 cup shredded Gruyere, Asiago or sharp Cheddar cheese (I like Gruyere best)
- 1 tablespoon sauce from a can of chipotle peppers in adobo sauce (more if you like it extra spicy)
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon red pepper flakes
- 1 tablespoon fresh chopped rosemary
- 2 green onions, sliced
Instructions:
- Preheat oven to 350 degrees F. and grease a mini muffin tin.
- Combine all ingredients except for 1/4 cup of the shredded cheese in a large bowl. Use a spoon or your hands to mix until combined.
- Scoop into prepared mini muffin tin, filling each slot all the way to the top.
- Sprinkle reserved cheese on top of each mashed potato bite.
- Bake at 350 degrees F. for 20-25 minutes or until the cheese on top is melted, and the potatoes are heated through.
