Lemon-Garlic Tilapia & Green Beans

Instructions:

  1. Lemon-Garlic Tilapia & Green Beans:
  2. Cook the green beans first so they are ready to go. I blanched them by putting them in boiling water for about 3 minutes and then transferring to a bowl of ice water. Set aside.
  3. Combine flour, oregano, parsley, garlic salt, pepper, lemon zest, onion powder and paprika in a shallow dish.
  4. Place a large skillet over medium-high heat. Dredge the fish in the flour mixture, shaking off the excess. Melt 2-3 tablespoons butter in the skillet and add the fillets, two at a time. Cook until golden brown, about 3 minutes per side. Repeat with remaining fillets.
  5. Add 2 tablespoons of butter to the skillet and allow to melt. Add the green beans, garlic, grape tomatoes, and lemon juice and cook until heated through, 1-2 minutes. Serve with the tilapia and tartar sauce.
  6. Tartar Sauce:
  7. Melt the butter in a small skillet over medium heat. Add the minced onion and cook until soft, 2-3 minutes.
  8. Combine all ingredients (including the cooked onions) in a small bowl with a whisk. Serve with the tilapia.
