Lemon-Garlic Tilapia & Green Beans
Ingredients:
- Lemon-Garlic Tilapia & Green Beans:
- 3 Tablespoons flour
- 3 teaspoons chopped fresh oregano
- 4 Tablespoons chopped fresh parsley
- 1/4 teaspoon garlic salt
- 1/2 teaspoon pepper
- Zest of 1 lemon
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 4 6-oz tilapia fillets
- 4-5 Tablespoons butter
- 1/2 lb green beans
- 1 clove garlic, minced
- 1 cup grape tomatoes, halved
- Juice of 1 lemon
- Tartar Sauce:
- 1/4 cup mayonnaise
- 1 Tablespoon capers
- 1 1/2 Tablespoons rice vinegar
- 1 clove garlic, minced
- 1 Tablespoon sugar
- 1/4 large white onion, minced
- 1 Tablespoon butter
- Juice of 1 lemon
- 1 1/2 Tablespoons Dijon mustard
- 1 teaspoon hot sauce
- Salt and pepper, to taste
Instructions:
- Lemon-Garlic Tilapia & Green Beans:
- Cook the green beans first so they are ready to go. I blanched them by putting them in boiling water for about 3 minutes and then transferring to a bowl of ice water. Set aside.
- Combine flour, oregano, parsley, garlic salt, pepper, lemon zest, onion powder and paprika in a shallow dish.
- Place a large skillet over medium-high heat. Dredge the fish in the flour mixture, shaking off the excess. Melt 2-3 tablespoons butter in the skillet and add the fillets, two at a time. Cook until golden brown, about 3 minutes per side. Repeat with remaining fillets.
- Add 2 tablespoons of butter to the skillet and allow to melt. Add the green beans, garlic, grape tomatoes, and lemon juice and cook until heated through, 1-2 minutes. Serve with the tilapia and tartar sauce.
- Tartar Sauce:
- Melt the butter in a small skillet over medium heat. Add the minced onion and cook until soft, 2-3 minutes.
- Combine all ingredients (including the cooked onions) in a small bowl with a whisk. Serve with the tilapia.
