Maple Coffee Crisp Cookies
Ingredients:
For the cookies:
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup butter (softened)
- 1 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 Tablespoon real maple syrup
For the frosting:
- 1/2 cup butter (softened)
- 2 cups confectioners sugar
- 3 Tablespoons real maple syrup
- 1 Tablespoon milk
- 3 coffee crisp chocolate bars (roughly chopped (or whatever chocolate bar you like))
Instructions:
For the cookies:
- Preheat oven to 375 degrees F and line cookie sheets with parchment paper.
- Whisk together the flour, baking powder and salt in a small bowl and set aside.
- Cream together the butter and sugars with a mixer until smooth.
- Add egg and maple syrup, mixing until smooth.
- Add dry ingredients to the wet ingredients and mix until combined and crumbly. Use your hands to form the cookie dough.
- Roll out on a lightly floured surface to about 1/4 inch thick (I like them to be thin, but you can make them thicker and adjust the baking time if you like). Cut shapes with cookie cutters and place on prepared cookie sheets.
- Bake at 375 degrees F. for about 8 minutes or until edges are just starting to brown.
- Let cookies cool completely before frosting.
For the frosting:
- Combine the butter, sugar, milk and maple syrup until smooth.
- Use a piping bag or frosting knife to frost the cookies and sprinkle with chopped coffee crisp.
