Matcha Lemon Bars
Ingredients:
- For the crust:
- 2 cups flour
- 1/2 cup icing sugar
- 1/2 lb butter
- Pinch of salt
- For the filling:
- 5 eggs
- 2 1/2 cups sugar
- 2 Tablespoons grated lemon zest
- 1/2 cup lemon juice
- 5-6 mint leaves
- 1/2 cup flour
- 2 Tablespoons matcha powder
- Powdered sugar, for topping
Instructions:
- Preheat oven to 350 degrees F.
- Combine the flour, icing sugar, butter and salt with a mixer or pastry blender until dough starts to form.
- Press into a 9 x 13 baking pan. Bake at 350 degrees F. for 15 minutes or until just starting to brown around the edges.
- Place the lemon juice and the mint leaves in a small saucepan over medium-low heat. Bring to a boil to infuse the mint. Remove from the heat and discard the mint leaves.
- Combine all ingredients for the filling (except for the powdered sugar) with a whisk until smooth.
- Pour over the crust and bake at 350 degrees F. for 30 minutes, until the filling is set.
- Let cool completely before dusting with sifted powdered sugar and cutting into squares.
