Matcha Lemon Bars

Ingredients:

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Combine the flour, icing sugar, butter and salt with a mixer or pastry blender until dough starts to form.
  3. Press into a 9 x 13 baking pan. Bake at 350 degrees F. for 15 minutes or until just starting to brown around the edges.
  4. Place the lemon juice and the mint leaves in a small saucepan over medium-low heat. Bring to a boil to infuse the mint. Remove from the heat and discard the mint leaves.
  5. Combine all ingredients for the filling (except for the powdered sugar) with a whisk until smooth.
  6. Pour over the crust and bake at 350 degrees F. for 30 minutes, until the filling is set.
  7. Let cool completely before dusting with sifted powdered sugar and cutting into squares.
