Mini Baked Pasta Cups
Ingredients:
- 1/2 lb small pasta noodles (macaroni, penne, anelletti)
- 1 24 oz jar tomato basil pasta sauce
- 1/2 cup kalamata olives (halved)
- 1/4 cup sun dried tomatoes
- 1 clove garlic (minced)
- 1 teaspoon red pepper flakes
- 1 teaspoon Italian seasoning
- 1 Tablespoon lemon juice
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- Fresh basil (for garnish)
Instructions:
- Cook the pasta according to the package directions.
- Meanwhile, preheat oven to 375 degrees F and grease 8 small (6 oz.) ramekins.
- Combine the pasta sauce, olives, sun dried tomatoes, garlic, red pepper flakes, Italian seasoning and lemon juice.
- Add the cooked pasta to the pasta sauce and toss to combine.
- Divide the pasta evenly between the 8 ramekins. They should be filled up almost all the way to the top with a little bit of room for the cheese.
- Sprinkle the cheese evenly over the top of each ramekin.
- Bake at 375 degrees F. for 20-25 minutes until the cheese is melted and starting to bubble/brown on top.
- Sprinkle with fresh basil and serve!
