Mini Blackberry Trifles
Ingredients:
- 2 cups heavy cream
- 1 teaspoon vanilla
- 1/4 cup powdered sugar
- 2 packages fresh blackberries (about 2 cups)
- Zest of 1 lemon
- 1 Tablespoon sugar
- 1/4 cup Kahlua or other coffee liqueur
- 1/2 cup white chocolate-covered pretzels, crushed, plus extra whole pretzels for garnish (you can use regular pretzels if you can't find the chocolate ones)
- 1 store bought angel food cake, cut into 1" cubes
Instructions:
- Combine the cream, vanilla and powdered sugar in a large bowl and beat with an electric mixer until stiff peaks form (about 5 minutes).
- Use a muddler or wooden spoon to crush one package of the blackberries in a bowl.
- Fold the crushed blackberries into the whipped cream with a spatula.
- Combine the remaining package of blackberries in a bowl with the lemon zest and sugar. Toss together and let sit until the sugar is dissolved.
- Assemble your trifle by placing 3 - 4 cubes of angel food cake in the bottom of each jar (more or less depending on what size dish you are using). I used 8, 8 oz jars.
- Add a splash of the Kahlua to the cake at the bottom of each trifle.
- Top with a couple spoonfuls of the whipped cream (about 2 Tablespoons).
- Top with a layer of the crushed pretzels.
- Add a layer of the fresh blackberries with lemon zest.
- Top with an additional spoonful of the whipped cream and garnish with a fresh blackberry and a chocolate-covered pretzel.
