Mini Blackberry Trifles

Ingredients:

Instructions:

  1. Combine the cream, vanilla and powdered sugar in a large bowl and beat with an electric mixer until stiff peaks form (about 5 minutes).
  2. Use a muddler or wooden spoon to crush one package of the blackberries in a bowl.
  3. Fold the crushed blackberries into the whipped cream with a spatula.
  4. Combine the remaining package of blackberries in a bowl with the lemon zest and sugar. Toss together and let sit until the sugar is dissolved.
  5. Assemble your trifle by placing 3 - 4 cubes of angel food cake in the bottom of each jar (more or less depending on what size dish you are using). I used 8, 8 oz jars.
  6. Add a splash of the Kahlua to the cake at the bottom of each trifle.
  7. Top with a couple spoonfuls of the whipped cream (about 2 Tablespoons).
  8. Top with a layer of the crushed pretzels.
  9. Add a layer of the fresh blackberries with lemon zest.
  10. Top with an additional spoonful of the whipped cream and garnish with a fresh blackberry and a chocolate-covered pretzel.
