Mini Cheesecakes

Ingredients:

Instructions:

  1. Preheat oven to 350 degrees F and place liners in a mini muffin tin or grease the tin really well.
  2. Place a cookie in the bottom of each.
  3. Use a mixer to beat the cream cheese until smooth and creamy.
  4. Add the egg, sugar, vanilla and cocoa powder, mixing until smooth. Fold in the melted and cooled chocolate.
  5. Scoop about a tablespoon of the cheesecake mixture into the mini muffin cups on top of the cookies and smooth with the back of a spoon to flatten.
  6. Bake at 350 degrees F for 15-20 minutes. When they are done, they should spring back a little when you poke one with your finger. Allow the mini cheesecakes to cool completely.
  7. Top each with a few cherries from the pie filling.
