Mini Cheesecakes
Ingredients:
- 1 (8 oz) package cream cheese, room temperature*
- 1 egg
- 1/2 cup sugar
- 1 tablespoon cocoa powder
- 4 ounces semisweet chocolate, melted and slightly cooled
- 1 teaspoon vanilla
- 24 mini chocolate chip cookies*
- 1 can cherry pie filling or 1/2 recipe for homemade cherry pie filling*
Instructions:
- Preheat oven to 350 degrees F and place liners in a mini muffin tin or grease the tin really well.
- Place a cookie in the bottom of each.
- Use a mixer to beat the cream cheese until smooth and creamy.
- Add the egg, sugar, vanilla and cocoa powder, mixing until smooth. Fold in the melted and cooled chocolate.
- Scoop about a tablespoon of the cheesecake mixture into the mini muffin cups on top of the cookies and smooth with the back of a spoon to flatten.
- Bake at 350 degrees F for 15-20 minutes. When they are done, they should spring back a little when you poke one with your finger. Allow the mini cheesecakes to cool completely.
- Top each with a few cherries from the pie filling.
