Mint Chocolate M&M Cookies
Ingredients:
- 1 cup shortening
- 1 cup white sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup mint chocolate M&Ms
- 1 cup Andes mints for baking or regular Andes mints chopped up
Instructions:
- Use a mixer to cream together the shortening and sugars for 5 minutes until smooth and fluffy.
- Add eggs and vanilla, mixing until fluffy.
- Add flour, baking soda and salt, mixing until combined into a dough.
- Stir in the Andes mints and M&Ms. If you want to have some on top of the cookies, save about 1/4 cup of each.
- Scoop into 1 inch balls and place on parchment-lined sheet in the freezer for 15 minutes while you preheat the oven to 375 degrees F.
- Bake at 375 for 8-10 minutes until the edges are just browning.
- If you want to add M&Ms and / or Andes mints on top of the cookies, lightly press them into the tops of the cookies when there is about 2 minutes left of the baking time and return to the oven to finish.
