Mint Chocolate M&M Cookies

Ingredients:

Instructions:

  1. Use a mixer to cream together the shortening and sugars for 5 minutes until smooth and fluffy.
  2. Add eggs and vanilla, mixing until fluffy.
  3. Add flour, baking soda and salt, mixing until combined into a dough.
  4. Stir in the Andes mints and M&Ms. If you want to have some on top of the cookies, save about 1/4 cup of each.
  5. Scoop into 1 inch balls and place on parchment-lined sheet in the freezer for 15 minutes while you preheat the oven to 375 degrees F.
  6. Bake at 375 for 8-10 minutes until the edges are just browning.
  7. If you want to add M&Ms and / or Andes mints on top of the cookies, lightly press them into the tops of the cookies when there is about 2 minutes left of the baking time and return to the oven to finish.
