Nanaimo Bar Mocha
Ingredients:
- 1 cup coconut milk
- 1 cup walnut milk
- 8 ounces good quality dark chocolate (you could also make this with 1/2 cup cocoa powder)
- 4 cups strong brewed coffee or espresso
- Maple syrup for sweetening
- Toasted coconut and whipped cream for topping
Instructions:
- Combine the coconut milk, walnut milk and dark chocolate in a medium saucepan over medium-low heat. Note that when you add the coconut milk, try to just pour in the creamy part on top without getting too much of the separated water at the bottom of the can. It just makes for a nicer texture.
- Cook until the chocolate is melted, and the mixture is just starting to boil, stirring frequently.
- Remove from the heat and transfer to a blender.
- Blend on high for 30 seconds or until the mixture is frothy.
- To make one mocha, combine 1 cup coffee with 1/2 cup of the mocha mixture and a little maple syrup to sweeten it. Add as much or as little of the maple syrup as you like.
- Store the rest of the mocha mixture in the fridge if you are only making one mocha. Reheat in the morning and add to your coffee to make a morning mocha! I am lazy and just throw it in the microwave, but you could reheat in a saucepan and froth it up again. An alternative to a blender is if you actually have a milk frother. you could also put it into a sealed jar and shake it like a crazy person to froth it up.
- Top with whipped cream and toasted coconut.
