Nanaimo Bars
Ingredients:
For the bottom layer
- 1/2 cup butter
- 1/3 cup cocoa powder
- 1/4 cup sugar
- 1 large egg, beaten
- 1 1/2 cups graham cracker crumbs
- 3/4 cup sweetened, shredded coconut (unsweetened is fine as well)
- 1/2 cup chopped walnuts
For the middle layer
- 2 cups icing sugar
- 1/2 cup butter, softened
- 3 Tbsp milk
- 2 Tbsp vanilla custard powder (or about 3 Tbsp instant vanilla pudding)
For the top layer
- 2/3 cup chopped semisweet or dark chocolate
- 2 Tbsp butter, melted
Instructions:
For the bottom layer
- Heat and stir butter, cocoa, and sugar in medium saucepan on medium-low until smooth.
- Remove from heat to cool for a couple of minutes before adding the egg to avoid scrambling. Add egg and stir until thickened.
- Add graham crumbs, coconut, and walnuts. Press into a 9" x 9" pan lined with parchment paper. Chill in the fridge until ready to add the next layer.
For the middle layer
- Use a mixer to combine all ingredients until smooth.
- Spread over bottom in the pan. Put the pan in the freezer for about 5 minutes before adding the top layer.
For the top layer
- Melt the chocolate in a microwave safe dish in 30 second increments, stirring after each, until smooth. Stir in the melted butter.
- Spread over chilled custard layer. Chill in the fridge until set before cutting into squares to serve. I like to cut them into tiny squares (5 x 5), but you can also cut 9 large squares.
