Instructions:

For the crust:

  1. Combine the flour and salt in a mixing bowl.
  2. Cut the butter and shortening into pieces and add to the flour mixture.
  3. Use a pastry blender (or you can do this in a food processor) to combine until the mixture is crumbly with pea-sized bits.
  4. Add the ice water and use a fork to combine until a dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least an hour before rolling it out.

For the filling:

  1. Combine all ingredients with a mixer until smooth.

To assemble:

  1. Line a baking sheet with parchment paper and preheat the oven to 350 degrees F.
  2. Roll out the cold pie dough and cut out whatever shapes you like. I just free-handed some rectangles that were about 3 x 4 inches, and I ended up with 14 total (7 pop tarts). Transfer to the prepared baking sheet.
  3. Spoon about 2 Tablespoons of the filling onto half of the pies. If you are going with smaller pies or different shapes, you will need to adjust the amount of filling. Spread the filling out, leaving about 1/2 inch of space around the edges.
  4. Use water to wet the edges of the pies and place the remaining pie crusts overtop of the filling, pressing around the edges to seal.
  5. Use a fork to crimp all around the edges of the pop tarts. Brush the tops with the melted butter, and cut 2 or 3 slits in the top of each to allow steam to escape.
  6. Bake at 350 degrees F. for 20-25 minutes or until the edges are browning.
  7. Allow them to cool completely before frosting with Nutella.
