Nutella Snickerdoodle Sandwiches
Ingredients:
For the snickerdoodles
- 2 1/2 cups flour
- 1/2 cup shortening
- 1 1/2 cups sugar, plus 1/3 cup for rolling
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon cream of tartar
- 1 teaspoon baking soda
- ¾ teaspoon salt
- ¼ teaspoon ginger
- ¼ teaspoon cloves
- ½ teaspoon nutmeg
- 2 Tablespoons cinnamon for rolling
For the Nutella filling
- 1/3 cup butter, room temperature
- 3/4 cup Nutella
- 3 cups icing sugar
- 2 Tablespoons heavy whipping cream (more or less as needed for consistency)
Instructions:
For the snickerdoodles
- Preheat oven to 400 degrees F. and spray a baking sheet with cooking spray or line with parchment paper.
- Cream 1 ½ cups sugar with butter and shortening with a stand or hand mixer. Add the eggs and vanilla, mixing until well combined.
- Add all dry ingredients (aside from the sugar and cinnamon for rolling) and stir until cookie dough forms.
- Combine the cinnamon and 1/3 cup sugar in a small bowl. Roll the cookie dough into small, 1-inch balls and roll in the cinnamon sugar mixture until completely covered.
- Bake at 400 degrees F for 7 to 9 minutes or until edges are just browning. Allow to cool completely before icing
For the Nutella filling
- Use a mixer to cream the butter and Nutella until smooth and fluffy, about 5 minutes.
- Add the remaining ingredients and beat until smooth, another 3-4 minutes.
- Spread or pipe on the snickerdoodles to make sandwiches
