Nutella Snickerdoodle Sandwiches

Ingredients:

Instructions:

For the snickerdoodles
  1. Preheat oven to 400 degrees F. and spray a baking sheet with cooking spray or line with parchment paper.
  2. Cream 1 ½ cups sugar with butter and shortening with a stand or hand mixer. Add the eggs and vanilla, mixing until well combined.
  3. Add all dry ingredients (aside from the sugar and cinnamon for rolling) and stir until cookie dough forms.
  4. Combine the cinnamon and 1/3 cup sugar in a small bowl. Roll the cookie dough into small, 1-inch balls and roll in the cinnamon sugar mixture until completely covered.
  5. Bake at 400 degrees F for 7 to 9 minutes or until edges are just browning. Allow to cool completely before icing
For the Nutella filling
  1. Use a mixer to cream the butter and Nutella until smooth and fluffy, about 5 minutes.
  2. Add the remaining ingredients and beat until smooth, another 3-4 minutes.
  3. Spread or pipe on the snickerdoodles to make sandwiches
