Oatmeal Raisin Cookies
Ingredients:
- 1 cup butter
- 1 cup granulated sugar
- 1/2 cup lightly packed brown sugar
- 1 egg
- 1 1/4 cup flour
- 1 cup old fashioned oats
- 1/4 cup wheat germ
- 3/4 cup sweetened, shredded coconut*
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 cups chocolate chips or raisins
Instructions:
- Use a mixer to cream together the butter and sugars until smooth and fluffy.
- Add egg, mixing until fluffy.
- Add flour, oats, wheat germ, coconut, baking powder and baking soda and salt, mixing until combined into a dough.
- Stir in the chocolate chips or raisins.
- Scoop into 1 inch balls and place on parchment-lined sheet in the freezer for 15 minutes while you preheat the oven to 350 degrees F.
- Bake at 350 for 12-15 minutes until the edges are just browning.
