Olive and Artichoke Hummus
Ingredients:
- 2 cans chickpeas, drained and rinsed
- Juice of 1 lemon
- 2 teaspoons cumin
- 1/2 cup tahini
- 1/4 cup water
- 3 Tablespoons olive oil
- Salt, to taste
- 1/4 cup kalamata olives without pits
- 1/4 cup artichoke hearts
- Paprika for sprinkling
Instructions:
- Add the tahini and lemon juice to your food processor and blend it for 1-2 minutes until completely smooth and creamy. Make sure to stop and scrape down the sides if you need to.
- Add the chickpeas, cumin, water, olive oil and a pinch of salt in a food processor until smooth.
- Add salt to taste. Add additional water as needed to get the consistency that you prefer.
- Add the olives and artichoke hearts and pulse the food processor a few times until they are chopped up, but not completely ground up.
- Sprinkle with paprika and serve with your favorite snacks!
