One Pot Tortellini

Ingredients:

Instructions:

  1. Heat olive oil in a large skillet or pot over medium high heat.
  2. Add shallot, Brussels sprouts and chickpeas and cook for 3 minutes.
  3. Add garlic and seasonings and cook for another 2 minutes.
  4. Add cherry tomatoes, tortellini and water. Bring to a boil and cook according to package directions on the tortellini (usually 5-7 minutes).
  5. Remove from the heat and stir in parmesan cheese, lemon juice and parsley. Season with salt and pepper, to taste. Serve with additional cheese and parsley.
