One Pot Tortellini
Ingredients:
- 2 tablespoons olive oil
- 1 shallot, thinly sliced
- 1 cup thinly sliced Brussels sprouts
- 1 can chickpeas, drained and rinsed*
- 2 cloves garlic, minced
- 2 teaspoons dried Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup cherry tomatoes, halved
- 1 (16-20 oz) package store-bought tortellini*
- 1/2 cup water or vegetable broth
- 1/4 cup grated parmesan cheese
- Juice of 1 lemon
- 1/4 cup chopped parsley (1 tablespoon dried)
Instructions:
- Heat olive oil in a large skillet or pot over medium high heat.
- Add shallot, Brussels sprouts and chickpeas and cook for 3 minutes.
- Add garlic and seasonings and cook for another 2 minutes.
- Add cherry tomatoes, tortellini and water. Bring to a boil and cook according to package directions on the tortellini (usually 5-7 minutes).
- Remove from the heat and stir in parmesan cheese, lemon juice and parsley. Season with salt and pepper, to taste. Serve with additional cheese and parsley.
