Pumpkin Chocolate Chip Bread
Ingredients:
- 3 cups granulated sugar
- 2/3 cup butter, room temperature
- 1 cup vegetable or coconut oil
- 4 eggs
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon ground cloves
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 cups canned pumpkin
- 12 ounces semisweet chocolate chips
Instructions:
- Preheat oven to 350 degrees F. Grease and line loaf pans with parchment paper.
- Cream together the butter and sugar until smooth and fluffy, 3-5 minutes.
- Add the oil and eggs, mixing until smooth.
- Whisk together the dry ingredients in a separate bowl and add alternately with pumpkin to the creamed mixture.
- Fold in chocolate chips. If you like, save a few to sprinkle on top of the bread as well.
- Pour into prepared loaf pans. See notes below about the loaf pan sizes and baking times.
- Bake at 350 degrees for 45 minutes to 1 hour 30 minutes, depending on the size of the pans you are using. Refer to the notes below. Let the loaves cool in the pan about 10 minutes and then remove from pan and cool on racks.
