Pumpkin Cookies with Spiced Maple Frosting
Ingredients:
- Pumpkin Cookies with Spiced Maple Frosting
- 1 cup butter, softened
- 1 1/2 cups sugar
- 1 15 oz. can pumpkin puree
- 2 eggs
- 6 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- For the frosting:
- 1/2 cup butter
- 3 cups powdered sugar
- 1/4 cup maple syrup
- 1 teaspoon vanilla
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves
- Sprinkles
Instructions:
- For the cookies:
- Preheat oven to 400 degrees F.
- Cream together the butter and sugar with a mixer until smooth.
- Mix in the pumpkin and eggs until smooth.
- Combine the dry ingredients in a small bowl and then add to the wet ingredients, mixing until just combined.
- Roll dough into large, 1-inch balls and place on parchment-lined baking sheets. Dip the bottom of a glass in flour and press the dough balls to flatten them slightly.
- Bake at 400 degrees F. for 8-9 minutes or until the edges are just slightly browned.
- Let cool before frosting.
- For the frosting:
- Combine all ingredients until smooth. Add more powered sugar or maple syrup as needed to get the desired frosting consistency.
- Top cookies with a generous amount of frosting and dip in sprinkles.
