Pumpkin Spice Doughnuts

Instructions:

  1. Pumpkin Spice Doughnuts:
  2. Preheat oven to 325 degrees F, and spray a doughnut pan with baking spray.
  3. Combine the flour, brown sugar, and butter in a bowl either with an electric mixer or a wooden spoon until the butter is fairly well incorporated (it will be crumbly).
  4. Whisk in the baking powder, salt, and spices.
  5. Add pumpkin, egg, and vanilla and mix again either with an electric mixer or a wooden spoon.
  6. The batter will be similar to cake batter only a little bit thicker. Scoop it into a ziploc bag and cut off one of the corners. Pipe the batter in circles into the doughnut pan. I tried spooning one of them in, and it did not go well so it's definitely better to pipe it.
  7. Bake for 10-12 minutes until a toothpick comes out clean. Let cool in the pan on a wire rack for a couple of minutes, then turn out onto the rack to cool the rest of the way before glazing.
  8. Chocolate Glaze:
  9. Combine all ingredients in a small bowl. Dip each doughnut in the glaze and lay out on a wire rack over some wax paper until it hardens. I ended up with way too much of the glaze so you might want to cut back the recipe a bit.
