Pumpkin Spice Doughnuts
Ingredients:
- Pumpkin Spice Doughnuts
- 1 cup flour
- 1/4 cup plus 2 tablespoons brown sugar
- 3 tablespoons butter, softened
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/2 cup pumpkin puree (NOT pumpkin pie mix)
- 1 egg
- 1 tablespoon milk
- 1 teaspoon vanilla
- Chocolate Glaze
- 1 1/2 cup powdered sugar
- 3 tablespoons cocoa powder
- 3/4 teaspoon vanilla
- 2-3 tablespoons milk
Instructions:
- Pumpkin Spice Doughnuts:
- Preheat oven to 325 degrees F, and spray a doughnut pan with baking spray.
- Combine the flour, brown sugar, and butter in a bowl either with an electric mixer or a wooden spoon until the butter is fairly well incorporated (it will be crumbly).
- Whisk in the baking powder, salt, and spices.
- Add pumpkin, egg, and vanilla and mix again either with an electric mixer or a wooden spoon.
- The batter will be similar to cake batter only a little bit thicker. Scoop it into a ziploc bag and cut off one of the corners. Pipe the batter in circles into the doughnut pan. I tried spooning one of them in, and it did not go well so it's definitely better to pipe it.
- Bake for 10-12 minutes until a toothpick comes out clean. Let cool in the pan on a wire rack for a couple of minutes, then turn out onto the rack to cool the rest of the way before glazing.
- Chocolate Glaze:
- Combine all ingredients in a small bowl. Dip each doughnut in the glaze and lay out on a wire rack over some wax paper until it hardens. I ended up with way too much of the glaze so you might want to cut back the recipe a bit.
