Pumpkin Waffles with Apple Cider Syrup
Ingredients:
- Pumpkin Waffles:
- 1/3 cup brown sugar
- 1 cup flour
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 1/2 teaspoon baking powder
- 2 eggs
- 1 cup milk (I used fat free)
- 1 cup pumpkin puree
- Apple Cider Syrup:
- 1 cup apple cider
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves
- 2 Tablespoons cornstarch + water
- 2 Tablespoons butter
Instructions:
- Pumpkin Waffles:
- Combine the brown sugar and other dry ingredients in a large bowl.
- In a separate bowl, whisk together the eggs and milk.
- Pour the milk mixture over the dry ingredients and whisk together until smooth, removing any brown sugar lumps.
- Add the pumpkin and whisk together until smooth. Store the batter in the fridge until you are ready to make the waffles.
- Pour about 1/2 cup of the mixture into a waffle iron for each waffle. I ended up with 4 large waffles from this recipe.
- Apple Cider Syrup:
- Combine the apple cider through the cloves in a saucepan over medium heat.
- Mix the cornstarch with a little bit of water and pour into the mixture over the heat. Bring the mixture to a boil; reduce heat and let simmer until thickened (about 5 minutes).
- Remove the syrup from the heat and add the butter, stirring until melted. Serve over waffles!
