Pumpkin Waffles with Apple Cider Syrup

Instructions:

  1. Pumpkin Waffles:
  2. Combine the brown sugar and other dry ingredients in a large bowl.
  3. In a separate bowl, whisk together the eggs and milk.
  4. Pour the milk mixture over the dry ingredients and whisk together until smooth, removing any brown sugar lumps.
  5. Add the pumpkin and whisk together until smooth. Store the batter in the fridge until you are ready to make the waffles.
  6. Pour about 1/2 cup of the mixture into a waffle iron for each waffle. I ended up with 4 large waffles from this recipe.
  7. Apple Cider Syrup:
  8. Combine the apple cider through the cloves in a saucepan over medium heat.
  9. Mix the cornstarch with a little bit of water and pour into the mixture over the heat. Bring the mixture to a boil; reduce heat and let simmer until thickened (about 5 minutes).
  10. Remove the syrup from the heat and add the butter, stirring until melted. Serve over waffles!
