S'mores Brownie Bites
Ingredients:
For the graham cracker base
- 1 cup graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup brown sugar
For the brownie bites
- 1/2 cup dark chocolate, roughly chopped
- 1 cup butter
- 1/4 cup cocoa powder
- 2 teaspoons vanilla
- 3 eggs
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon salt
- 1 cup flour
- 1/2 teaspoon baking powder
- 1 package Smash Mallow Toasted Vanilla Marshmallows (or other marshmallows)
- 24 Ghirardelli chocolate squares
Instructions:
For the graham cracker base
- Stir together together the graham cracker crumbs, melted butter and brown sugar until well-mixed.
- Line a 24 cup mini muffin tin with mini muffin papers. Add about a teaspoon of the graham cracker mixture to the bottom of each cup. Use your fingers, the back of a measuring spoon or a tart tamper to press the crumbs into the bottom of each cup until firmly packed.
For the brownie bites
- Preheat oven to 325 degrees F.
- Melt the butter and chocolate together in 30 second increments, stirring after each until smooth. Set aside to cool for about 5 minutes.
- Whisk together the dry ingredients.
- Stir together the cooled chocolate, sugar, eggs and vanilla in a separate bowl.
- Add the dry ingredients and stir to combine.
- Spoon evenly into the prepared mini muffin tin on top of the graham cracker base to fill each cup about 3/4 of the way.
- Bake 12-13 minutes or until a toothpick comes out of the center with just a little bit of chocolate on in. Let cool for a few minutes in the tin before removing the brownie bites to cool the rest of the way.
- Top cooled brownie bites with one marshmallow, toast with a kitchen torch (or roast your marshmallow over a fire or the stove first) and top with a Ghirardelli chocolate square of your choosing.
