S'mores Pudding Bars
Ingredients:
- For the crust:
- 10 graham crackers
- 1/2 cup butter, melted
- 1/4 cup powdered sugar
- 1/2 cup flour
- For the chocolate filling:
- 2 ounces unsweetened chocolate, melted and cooled
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 package Dream whip + milk and vanilla, according to package directions
- For the topping:
- 1 1/2 cups marshmallow fluff (it's pretty easy to make your own, but I just used store bought)
- 1/2 cup icing sugar
- 3 graham crackers
Instructions:
- Crust:
- Preheat oven to 375 degrees F. and butter the bottom of a 9 x 9 square baking dish.
- Combine all ingredients in a food processor until completely crumbled.
- Press into the prepared baking dish until even and bake at 375 degrees F. for 15 - 20 minutes or until golden brown. Let cool completely.
- Filling:
- Cream together the butter and sugar until smooth.
- Add in the chocolate until blended.
- Add the eggs, one at a time, beating for 5 minutes after each addition.
- Prepare the dream whip according to the package directions.
- Fold prepared dream whip into the chocolate mixture until blended and smooth.
- Spread over the completely cooled crust and refrigerate for at least 2 hours to set.
- Topping:
- Combine the marshmallow fluff and icing sugar, beating until smooth and stiff, 3-4 minutes.
- Use a food processor to make crumbs out of the graham crackers.
- Spread the marshmallow topping on top of the set chocolate and top with graham cracker crumbs.
- Refrigerate for another hour before serving in squares (or just scooping the mess into bowls to devour).
