Smoky Sweet Cornbread

Instructions:

  1. Preheat the oven to 350 degrees F. and grease a 9x9 square or 9 inch round pie dish.
  2. Whisk together the flour, cornmeal, baking powder, sugar, salt and smoked paprika.
  3. Whisk together the butter, buttermilk and egg in a separate bowl. See notes below about making this recipe vegan.
  4. Stir the wet ingredients into the dry ingredients, just until combined. A few streaks of flour are totally fine. Do NOT over mix.
  5. Pour the batter into your prepared baking dish and level out with a spatula if needed.
  6. Bake at 350 degrees F. for 35-40 minutes. The cornbread is done when the top is golden brown and springs back when pressed with a finger. You can also check to see if a toothpick comes out clean in the center.
  7. Serve warm with chili or soup.
