Soy Chorizo Quesadillas with Spicy Avocado Crema
Ingredients:
For the quesadillas:
- 4 medium-sized flour tortillas
- 1 1/2 cups shredded cheese (use your favourite)
- 1/2 cup corn (can use canned, fresh or frozen)
- 1/2 cup black beans (drained and rinsed)
- 1/2 jalapeno (diced)
- 1/2 packet taco seasoning
- Soy chorizo (I didn't measure this out but used about half of a package from Trader Joe's - use however much you like)
For the avocado crema:
- 1/2 avocado
- 2 Tablespoons plain Greek yogurt
- 1/4 cup parsley or cilantro
- Juice of 1 lime
- 1/2 jalapeno (diced)
- 1/2 teaspoon garlic powder
- 1 teaspoon hot sauce
- Salt & pepper (to taste)
Instructions:
For the quesadillas:
- Combine the corn, black beans, jalapeno, soy chorizo and taco seasoning in a pan over medium heat. Cook until heated through, about 5 minutes. Transfer the mixture to a bowl and clean out the pan.
- Bring the pan back to medium heat and add the first tortilla. You can spray the pan or add butter if you like your quesadillas to be more browned, but I don't usually add anything when making dillas.
- Spread half of the cheese over the tortilla then top with half of the soy chorizo mixture before placing a second tortilla on top. Cook until browned, 3-5 minutes. Just keep checking by lifting the edge with a spatula.
- Flip the quesadilla and cook on the other side for another 3 minutes or so until browned.
- Repeat to make a second quesadilla. Cut into 4 triangles and serve with the avocado crema.
For the avocado crema:
- Combine all ingredients in a blender or food processor until smooth.
