Soy Chorizo Quesadillas with Spicy Avocado Crema

Instructions:

For the quesadillas:

  1. Combine the corn, black beans, jalapeno, soy chorizo and taco seasoning in a pan over medium heat. Cook until heated through, about 5 minutes. Transfer the mixture to a bowl and clean out the pan.
  2. Bring the pan back to medium heat and add the first tortilla. You can spray the pan or add butter if you like your quesadillas to be more browned, but I don't usually add anything when making dillas.
  3. Spread half of the cheese over the tortilla then top with half of the soy chorizo mixture before placing a second tortilla on top. Cook until browned, 3-5 minutes. Just keep checking by lifting the edge with a spatula.
  4. Flip the quesadilla and cook on the other side for another 3 minutes or so until browned.
  5. Repeat to make a second quesadilla. Cut into 4 triangles and serve with the avocado crema.

For the avocado crema:

  1. Combine all ingredients in a blender or food processor until smooth.
