Spicy Maple Glazed Carrots
Ingredients:
- 2 cups baby carrots
- 1/4 cup maple syrup
- 2 tablespoons chili garlic sauce
- 1/4 cup soy sauce
- 2 tablespoons fresh chopped ginger
- 3 tablespoons butter
- Fresh chopped rosemary for serving
Instructions:
- To cook carrots, place in a small pot and fill with enough water to just cover them.
- Bring to a boil over medium-high heat and let cook until tender when pierced with a fork. You don't want them to be mushy, but they should be soft enough to stab with a fork without any trouble. This usually takes anywhere from 5-10 minutes depending on the size of your carrots so just keep an eye on them.
- Drain the carrots before glazing.
- Whisk together the maple syrup, chili garlic sauce, soy sauce and ginger in a small dish.
- Return the empty pot to the burner over medium-low heat. Add the butter and cook until melted.
- Add the maple mixture and stir to combine with the butter. Bring to a boil and cook, stirring constantly, for 2-3 minutes until thickened.
- Remove from heat and add the carrots. Toss to coat the carrots in the glaze. Top with fresh chopped rosemary to serve.
