Spicy Maple Glazed Carrots

  1. To cook carrots, place in a small pot and fill with enough water to just cover them.
  2. Bring to a boil over medium-high heat and let cook until tender when pierced with a fork. You don't want them to be mushy, but they should be soft enough to stab with a fork without any trouble. This usually takes anywhere from 5-10 minutes depending on the size of your carrots so just keep an eye on them.
  3. Drain the carrots before glazing.
  4. Whisk together the maple syrup, chili garlic sauce, soy sauce and ginger in a small dish.
  5. Return the empty pot to the burner over medium-low heat. Add the butter and cook until melted.
  6. Add the maple mixture and stir to combine with the butter. Bring to a boil and cook, stirring constantly, for 2-3 minutes until thickened.
  7. Remove from heat and add the carrots. Toss to coat the carrots in the glaze. Top with fresh chopped rosemary to serve.
