Spicy Soy Chorizo Tofu Scramble
Ingredients:
- 1/2 package of soy chorizo (about 6 ounces)
- 1/2 block of extra firm tofu (6 ounces)
- Juice of 1 lime
- 1/2 jalapeno, finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon turmeric (this gives you the yellow colour)
- 1 teaspoon prepared horseradish (optional)
- 1 Tablespoon water
Instructions:
- Drain the tofu between sheets of paper towel topped with something heavy like a plate for 10 minutes.
- Crumble the dried tofu with a fork so it looks like scrambled eggs.
- Heat a pan over medium heat on the stove. Add the tofu, lime juice and chopped jalapeno and saute for about 2 minutes.
- Meanwhile, combine the garlic powder, chili powder, cumin, paprika, turmeric, horseradish and water to make a sauce.
- Pour over the tofu and continue to cook for another 5 minutes, stirring frequently.
- Add the soy chorizo to the pan, using a spatula to crumble and saute with the tofu for another 5 minutes.
- Serve with avocado toast, arugula salad or any other sides you like.
