Spicy Soy Chorizo Tofu Scramble

Instructions:

  1. Drain the tofu between sheets of paper towel topped with something heavy like a plate for 10 minutes.
  2. Crumble the dried tofu with a fork so it looks like scrambled eggs.
  3. Heat a pan over medium heat on the stove. Add the tofu, lime juice and chopped jalapeno and saute for about 2 minutes.
  4. Meanwhile, combine the garlic powder, chili powder, cumin, paprika, turmeric, horseradish and water to make a sauce.
  5. Pour over the tofu and continue to cook for another 5 minutes, stirring frequently.
  6. Add the soy chorizo to the pan, using a spatula to crumble and saute with the tofu for another 5 minutes.
  7. Serve with avocado toast, arugula salad or any other sides you like.
