Strawberry, Raspberry and Blueberry Waffles
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 tablespoon baking powder
- 3 tablespoons sugar
- 2 egg yolks
- 2 egg whites
- 1/2 cup butter, melted*
- 1 1/2 cups vanilla almond milk*
- 1 teaspoon vanilla extract
- 1/3 fresh blueberries
- 1/3 cup fresh sliced strawberries
- 1/3 cup fresh halved raspberries
- Whipped cream and maple syrup for serving
Instructions:
- Preheat your waffle iron.
- Whisk together the flour, salt, baking powder and sugar in a large bowl and set aside.
- In a separate bowl, whisk together the melted butter, almond milk, egg yolks and vanilla extract.
- Use an electric mixer to whip the egg whites in another separate bowl until stiff peaks form.*
- Whisk the milk and yolk mixture into the dry ingredients until there are no lumps of flour remaining.
- Gently fold the whipped egg whites into the waffle batter.*
- Spray the preheated waffle iron with oil and fill with prepared batter. Sprinkle some of the prepared fresh berries over the waffle before closing the iron and cooking until golden brown and crisp on the outside. Follow the instructions/indicator on your waffle iron for the cooking time.
- Serve with more fresh berries, whipped cream and maple syrup.
