Super Easy Breakfast Sandwiches
Ingredients:
For the avocado spread
- 2 avocados
- Juice of 1 lime
- 1 Tablespoon everything bagel seasoning (either store bought or homemade)
- 1/4 cup crumbled feta cheese
- 1/4 cup quartered cherry tomatoes
- Dash of hot sauce
For the sandwiches
- 4 English muffins (halved and toasted)
- 4 eggs
- Salt & pepper
- Avocado spread
- Spinach or arugula
Instructions:
For the avocado spread
- Smash in a bowl with a fork or potato masher. I like to keep some larger chunks of avocado, but you can make it as smooth as you like.
- Add the remaining ingredients and mix everything together to form a spread.
For the sandwiches
- Grease 4 small ramekins with cooking spray.
- Add an egg to each ramekin. Season with some salt & pepper and scramble it all together with a fork. You can also leave it unscrambled if you like the yolk to be separate.
- Microwave on for about 40 seconds. Add an additional 5-10 seconds if the egg is still too runny.
- Spread a generous amount of the avocado spread on each english muffin. Stack with the cooked egg and greens.
