Ingredients:

Instructions:

  1. Line 2 cookie sheets with parchment paper and preheat the oven to 300 degrees F.
  2. Use an electric mixer to beat the butter and brown sugar together until smooth and fluffy.
  3. Add the egg yolks, mixing to combine.
  4. Add the flour and mix just until combined.
  5. Roll the dough into small balls, about an inch and a half.
  6. Dip each dough ball in the egg white and then roll in the chopped nuts to coat. Place on prepared cookie sheets, about 2 inches apart. Press the center of each cookie down with your thumb to create a depression in the middle for the cherry.
  7. Bake cookies for 5 minutes. Remove from the oven, press the center down again (be careful because they are hot!), and add a cherry to each. Return to the oven for another 15 minutes until golden brown.
