Swedish Teacakes
Ingredients:
- 1 cup salted butter, softened to room temperature
- 1/2 cup light brown sugar
- 2 egg yolks, slightly beaten
- 2 egg whites, slightly beaten
- 2 cups all-purpose flour
- 1 cup very finely chopped walnuts or pecans
- Red or green candied cherries*
Instructions:
- Line 2 cookie sheets with parchment paper and preheat the oven to 300 degrees F.
- Use an electric mixer to beat the butter and brown sugar together until smooth and fluffy.
- Add the egg yolks, mixing to combine.
- Add the flour and mix just until combined.
- Roll the dough into small balls, about an inch and a half.
- Dip each dough ball in the egg white and then roll in the chopped nuts to coat. Place on prepared cookie sheets, about 2 inches apart. Press the center of each cookie down with your thumb to create a depression in the middle for the cherry.
- Bake cookies for 5 minutes. Remove from the oven, press the center down again (be careful because they are hot!), and add a cherry to each. Return to the oven for another 15 minutes until golden brown.
