For the yogurt spread:

  1. Whisk together all ingredients in a small dish until combined. Set aside.

For the sandwich:

  1. Spread as much of the yogurt spread as you like on each slice of bread.
  2. Layer the sliced veggies on one slice of bread and top with the second slice of bread.
