Tangy Greek Veggie Sandwich
Ingredients:
For the yogurt spread:
- 1/4 cup plain Greek yogurt (I usually buy fat free but whatever kind you've got works)
- 1 Tablespoon Dijon mustard
- 1 Tablespoon prepared horseradish
- 1 Tablespoon fresh (chopped dill)
- 1 teaspoon hot sauce (I used Frank's red hot)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
For the sandwich:
- Sourdough bread (or your favourite bread - I buy mine from Sprouts because it is amazing)
- Cucumber (thinly sliced (I used about 1/4 of a cucumber))
- 1/2 red bell pepper (thinly sliced)
- 1/2 large avocado (thinly sliced)
- 1/4 cup crumbled feta cheese
- 1/4 cup arugula
- 1/4 cup pepperoncini
Instructions:
For the yogurt spread:
- Whisk together all ingredients in a small dish until combined. Set aside.
For the sandwich:
- Spread as much of the yogurt spread as you like on each slice of bread.
- Layer the sliced veggies on one slice of bread and top with the second slice of bread.
