The Best Caesar Dressing Ever
Ingredients:
- 1 Tablespoon Dijon mustard
- 1 egg yolk
- 2 Tablespoons shredded or grated Parmesan cheese
- 1 teaspoon Worcestershire sauce
- 1 Tablespoon lemon juice
- 1 Tablespoon red wine vinegar
- 1 clove garlic (minced)
- 1/4 cup olive oil
- Pinch of anchovy paste (leave out for vegetarian version)
- Salt and pepper, to taste
Instructions:
- Combine all ingredients in a small food processor or blender and process until creamy and smooth.
- Serve over your favourite caesar salad. I like to use mixed greens, croutons, shredded Parmesan, avocado, and in this version I added some crispy sweet potato shoestrings (just grate, toss in some olive oil and bake at 375 degrees F. on a sheet tray for about 30 minutes, stirring and checking every 10 minutes).
