"The Good Mashed Potatoes"
Ingredients:
- 5 lbs potatoes (peeled and cut into 8ths)
- 8 ounces cream cheese (room temperature)
- 1 cup sour cream
- 4 tablespoons butter
- 1 tablespoon onion salt
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Paprika (for garnish (I also added some sliced green onions at the end))
Instructions:
- Place potatoes in a large pot and fill with enough water to cover them.
- Bring to a boil over high heat and cook until tender when pierced with a fork, about 10-15 minutes.
- Drain potatoes and place them in a large bowl to mash them. I just use an electric mixer to mash them.
- Add cream cheese in pieces. Add the sour cream, butter, onion salt, salt and pepper. Beat until smooth and fluffy.
- Return potatoes to an oven-proof dish. Sprinkle with paprika. At this point, you can cover the dish and store it in the fridge until you are ready for them. When you are ready, heat the dish at 350 degrees F. for 15-20 minutes until heated through, or put in the microwave for about 10 minutes.
