Vanilla Chai Cupcakes
Ingredients:
- Vanilla Chai Cupcakes:
- 1/2 cup butter, softened
- 1 cup brown sugar
- 1 egg
- 1/4 cup melted coconut oil
- 1 1/4 cup flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- A pinch of ground black pepper
- 1/2 cup vanilla chai tea (recipe here) - if you don't want to make your own, you can also just use a vanilla chai tea bag steeped for a few minutes in equal parts boiling water and almond milk
- Frosting:
- 1/2 cup butter, softened
- 3 1/2 cups icing sugar
- 1/4 cup vanilla chai tea (recipe here)
Instructions:
- Vanilla Chai Cupcakes:
- Preheat oven to 350 degrees F.
- Cream together the butter and brown sugar with a mixer until smooth.
- Add the egg and coconut oil, beating until smooth.
- Whisk together the dry ingredients (flour through pepper) in a separate bowl.
- Add the dry ingredients and the vanilla chai tea to the wet ingredients in 2 alternating additions, beginning with the flour.
- Blend just until combined.
- Line a cupcake tray with papers. Fill each about 3/4 of the way with batter.
- Bake at 350 degrees F. for 16-18 minutes or until a toothpick comes out clean.
- Remove from tray and cool completely on a cooling rack before frosting.
- Frosting:
- Combine all ingredients with a mixer until smooth. Pipe onto cooled cupcakes.
