Vanilla orange oatmeal cookies
Ingredients:
For the cookies:
- 1/2 cup butter (softened)
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 teaspoon vanilla
- Zest of 1 orange
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 cups oats
For the glaze:
- 1/3 cup orange juice (about 2 oranges)
- 1 teaspoon vanilla extract
- Zest of 1 orange
- 2 1/2 cups powdered sugar
Instructions:
For the cookies:
- Preheat oven to 350 degrees F. and line a couple of baking sheets with parchment paper.
- Cream together the butter and sugars until light and fluffy.
- Add the egg, vanilla and orange zest, mixing until smooth.
- Whisk together the flour, baking powder, baking soda and salt in a small bowl.
- Add dry ingredients to wet ingredients, stirring just until combine.
- Add the oats, stirring just until combined.
- Scoop 1-inch balls of dough onto the prepared baking sheets and set a couple of inches apart. Press down lightly with the bottom of a glass or the heel of your palm to flatten slightly.
- Bake at 350 degrees F. for 10 minutes or until edges are just starting to brown.
- Cool completely before glazing.
For the glaze:
- Combine all ingredients, stirring until smooth. If the consistency seems too thick to dip your cookies in, just add some more orange juice or a little water. If it seems too runny, add more powdered sugar to thicken.
- Dip your cooled cookies in the glaze and set on wax paper or cooling racks until the glaze sets.
