Vanilla orange oatmeal cookies

For the cookies:

  1. Preheat oven to 350 degrees F. and line a couple of baking sheets with parchment paper.
  2. Cream together the butter and sugars until light and fluffy.
  3. Add the egg, vanilla and orange zest, mixing until smooth.
  4. Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  5. Add dry ingredients to wet ingredients, stirring just until combine.
  6. Add the oats, stirring just until combined.
  7. Scoop 1-inch balls of dough onto the prepared baking sheets and set a couple of inches apart. Press down lightly with the bottom of a glass or the heel of your palm to flatten slightly.
  8. Bake at 350 degrees F. for 10 minutes or until edges are just starting to brown.
  9. Cool completely before glazing.

For the glaze:

  1. Combine all ingredients, stirring until smooth. If the consistency seems too thick to dip your cookies in, just add some more orange juice or a little water. If it seems too runny, add more powdered sugar to thicken.
  2. Dip your cooled cookies in the glaze and set on wax paper or cooling racks until the glaze sets.
