Vegan Ginger Cookies
Ingredients:
- 1/2 cup coconut oil
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup applesauce
- 1/2 cup apple cider
- 1/2 cup molasses
- 4 - 4 1/2 cups flour*
- 1 teaspoon salt
- 1 tablespoon baking soda
- 1 tablespoon ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/3 cup sugar, for rolling
Instructions:
- Preheat oven to 350 degrees F.
- Use a mixer with the paddle attachment to cream together coconut oil and sugars until light and fluffy, 5 minutes.
- Add the applesauce, apple cider and molasses and mix for another minute to combine.
- Add the dry ingredients, mixing just until a dough forms.
- Scoop into 1 tablespoon balls and roll in the extra 1/3 cup of sugar in a shallow dish. Place on parchment paper lined baking sheets about 2 inches apart.
- Flatten the dough balls slightly with the bottom of a cup to help create crinkles as they will not spread much when baking.
- Bake at 350 degrees F. for 8-9 minutes or until solid when tapped with a finger.
